Ingredients:
1 cup steamed broccoli, chopped
1 cup shredded mozzarella or cheddar cheese
4 flour tortillas
1 tablespoon olive oil
Instructions:
Heat a skillet over medium heat and add a little olive oil.
Place one tortilla in the skillet and sprinkle with cheese and chopped broccoli.
Top with another tortilla and cook until the cheese is melted and the tortilla is golden brown, about 2-3 minutes per side.
Repeat with the remaining tortillas, cheese, and broccoli.
Cut into wedges and serve.
Broccoli Mac and Cheese
Ingredients:
2 cups elbow macaroni
2 cups steamed broccoli, chopped
2 cups shredded cheddar cheese
2 cups milk (dairy or non-dairy)
2 tablespoons butter
2 tablespoons flour
Salt and pepper to taste
Instructions:
Cook the macaroni according to package instructions, drain, and set aside.
In a large pot, melt butter over medium heat. Stir in the flour and cook for 1-2 minutes.
Gradually add the milk, stirring constantly until the mixture thickens.

Broccoli & Cheese Baked Potato
Cut a velveeta loaf into cubes, place the cubes and broccoli into a saucepan and heat through. Cool from bubbling and blend until a fine liquid/paste, there should be no noticeable broccoli in the result. Back into the sauce pan it goes and keep warm.
Wash, foil wrap and bake your russet potatoes
Cut your baked potato longways and pinch and push together the potato to make it open up.
(be careful not to burn yourself)
Pour the broc and cheese mixture over the opened potato.
Serve with grilled chicken or steak bites

1 cup shredded potatoes (you can use pre-shredded or grate your own)
1 egg, beaten
1/2 cup breadcrumbs

In a bowl, mix chopped broccoli, shredded potatoes, beaten egg, breadcrumbs, salt, and pepper.
Scoop tablespoon-sized portions of the mixture and form them into small tot shapes.
Place the tots on the baking sheet and bake for 20-25 minutes, or until golden and crispy.
Serve with ketchup or your favorite dipping sauce.
