Bread slices (whole wheat or white)
Cream cheese or hummus
Thinly sliced cucumber rounds
Optional: Sprouts, shredded carrots, or sliced avocado
Instructions:
Spread cream cheese or hummus on one side of each bread slice.
Arrange cucumber rounds (and other optional toppings) on half of the bread slices.
Top with the remaining bread slices to make sandwiches.
Cut into triangles or squares and serve.
Cucumber and Yogurt Dip
Ingredients:
1 cup Greek yogurt
1 cucumber, peeled and grated
1 clove garlic, minced
1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
Salt and pepper to taste
Instructions:
In a bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, salt, and pepper.
Mix well until smooth and creamy.

Cucumber Sushi Rolls
Ingredients:
Nori sheets (seaweed sheets)
Cooked sushi rice
Thinly sliced cucumber sticks
Optional fillings: Avocado slices, cooked shrimp or crab, cream cheese
Instructions:
Place a nori sheet on a bamboo sushi mat or a clean kitchen towel.
Spread a thin layer of sushi rice evenly over the nori sheet, leaving a small border at the top edge.
Arrange cucumber sticks and other fillings along the bottom edge of the nori sheet.
Using the sushi mat or towel, tightly roll up the nori sheet, pressing gently to seal.
Slice the roll into bite-sized pieces using a sharp knife.
Serve with soy sauce, pickled ginger, and wasabi.
Cucumber Lemonade
Ingredients:
2 cucumbers, peeled and chopped
1/2 cup fresh lemon juice
1/4 cup honey or sugar (adjust to taste)
4 cups cold water
Ice cubes
Lemon slices and cucumber slices for garnish
Instructions:
In a blender, combine chopped cucumbers, lemon juice, honey or sugar, and 1 cup of cold water.
Blend until smooth.
Strain the mixture through a fine mesh sieve into a pitcher to remove any pulp.
Add the remaining cold water to the pitcher and stir well.
Chill in the refrigerator for at least 1 hour before serving.
Serve over ice cubes and garnish with lemon slices and cucumber slices.
